Harper Valley Ranch Beef Ribs

I think the key to fabulous ribs is the ribs themselves.  I like the thick meaty ribs cut from the lower portion of the rib cage.  This style of rib is referred to as Short Plate or Loaded Beef Ribs,  The ribs are a fairly large cut with a nice layer of fat.  It is often hard to find this cut in the grocery store as most ribs offered are cut into individual chunks with a wildly varying amount of meat attached.

  •  3 Pounds Harper Valley Ranch Beef Short Ribs

  • Salt and Pepper to taste

  • 1 Medium Onion - cubed

  • 1/2 Cup of beef broth (I use beef bone broth)

  • 6 cloves garlic  - smashed


  1. Spray Slow Cooker with Olive Oil

  2. Add a layer of Onion and garlic

  3. Add Beef Broth

  4. Add ribs (frozen or defrosted)

  5. Add remaining onion and garlic on top of ribs

  6. Cook on low for 8 hours

  7. Remove ribs from crockpot and arrange on foil lined cookie sheet

  8. Brush ribs with Barbecue sauce - or the sauce of your choice

  9. Bake in preheated Oven (350) until sauce caramelizes 10—15 minutes

  10. Enjoy!
